Peanut Butter Fudge
1 cup lt brown sugar
1 cup white sugar
3/4 cup half and half
1 Tbs light corn syrup
pinch of salt
1/2 cup peanut butter
1 Tbs butter
1 tsp vanilla
8 or 9 inch buttered pan
Combine sugars, half and half, corn syrup and salt in heavy
saucepan. Stir over
medium heat until sugar dissolves. Boil to 236 degrees, soft ball
stage. Remove
from heat, add peanut butter and butter. Do not stir until
temperature reaches 110
degrees. Add vanilla and beat until thick and it loses gloss.
Quickly spread in pan.
Cool and cut into 36 squares.
