Dark Chocolate Fudge
2 c. sugar
1 (5 oz.) can evaporated milk
1/2 c. margarine
8 oz. unsweetened chocolate, melted over hot water
1 (7 oz.) jar marshmallow
1 c. almonds, chopped and toasted
1 tsp. vanilla
Combine sugar, milk, and margarine in heavy saucepan. Bring to full
rolling boil, stirring
constantly and heat to 240 degrees. Turn heat to very low and add
chocolate, stir until well
mixed. Remove from heat and add marshmallow, almonds, and vanilla.
Blend well and pour
into greased 9 x 9 x 2 pan. Cool to room temperature and cut in
squares. Makes about 2
pounds.
